Denne salat har jeg spist maaange gange over det sidste halve års tid. Jeg fandt først på den, dengang jeg eksperimenterede lidt med KISS-kost. Det fik jeg aldrig opdateret jer på, men det viste sig, at det ikke havde den store effekt for mig, så jeg droppede det igen, da det er for bøvlet at skulle regne på alle måltider på den måde, hvis jeg ikke kunne mærke fordel af det. Men salaten her opfylder i hvert fald KISS-principperne, hvis I sidder nogen derude og er på den vogn. For mig er den bare så god, at jeg holdt fast i den, selv efter selve makrofordelingen deri ikke længere var så vigtig for mig.
\n\n\n\nJeg har i et stykke tid haft lyst til at dele “opskriften” med jer, men dels er det et stort projekt for mig at huske at få taget et billede af min mad (dog meget nemmere nu vi har dagslys lidt længere igen), og dels har jeg på fornemmelsen at det er sådan en salat, som lidt vil dele vandene. Jeg elsker den – men kombien er måske lidt speciel. Og så er det måske ikke alle der er lige glade for skinkestrimler.
\n\n\n\nMen, som sagt, for mig er denne salat fænomenal. Den har en genial blanding af smage og konsistenser: salt fra skinke, hytteost og soja, sødme fra majs, syre fra balsamico, bitterhed fra kål og noget umami fra både skinke, hytteost, soja og balsamico. Så har vi sprødhed fra agurk, kål og majs, blød cremethed fra hytteosten og den lidt seje konsistens fra perlebyggen. Alt i alt er det bare den perfekt komponerede salat, hvis du spørger mig!
\n\n\n\nHvis du slet ikke er til skinkestrimler, kan du nok godt erstatte med noget andet protein af en art. Så ville jeg dog nok tilsætte noget salt for at opveje. Salaten er i øvrigt virkeligt hurtigt lavet. Jeg koger perlebyg i lidt større portioner og fryser ned, men har du ikke lige sådan en portion i fryseren, er det den del, der tager tid. Resten er bare lidt lynhurtigt snittearbejde og så er du good to go. Og for mine med-langsomspisere kan jeg berette, at denne er lidt hurtigere at spise, end andre kålsalater, fordi der er så meget til ligesom at “bløde det op”. Oftest når jeg ellers at blive træt af at spise, inden jeg får tygget mig igennem en stor salat med kål. If you know, you know…

Alt det gode ved smagen er der stadig. Det gælder også for hvidkål osv.
